Cold weather calls for extra vitamin C and meals that help our bodies fight the common cold and flu.
Whenever I'm feeling a little tired or run-down I put on a pot of Chicken Soup. Trying to fight colds naturally is always best and this old remedy is my favorite. Over the years I've come up with my own recipe and I wanted to share it with you.
Start with a basic vegetable stock. Wash and dry your chicken pieces and then salt well.
Place onions in your soup pot with some salt and cook until translucent.
Chicken Soup
4-5 pound chicken cut up into 8 pieces (have your butcher do this)
2 or more TB salt
pepper to taste
3 carrots
2 celery stalks
1 small onion
1 bay leaf
1/4 cup white wine
1-2 TB butter
About 28 to 32 ounces of chicken broth
parsley for garnish
bread for dipping or pasta of your choice
Rinse and dry chicken. Melt butter in your soup pot and add chopped onion. I sprinkle salt over the onions as they are cooking. When the onion starts to brown, add your white wine.
Add chopped celery and carrots and cook for about ten minutes.
Remove vegetables and add chicken. Cover chicken with the broth and a little water if necessary. Cook the chicken for about an hour or until done. Remove from heat and allow to cool. Refrigerate overnight. The next day, skim fat off the top of your soup. Take the chicken pieces out of the pot and take the meat off the bones. Add the meat, veges, and bay leaf to the pot and simmer for another hour or so. When your soup is done, garnish with parsley and serve with pasta or warm bread.
A glass of Cabernet Sauvingon is delicious with this.
After a long day, a hearty meal and maybe a glass of wine, it's time for a little pampering.

I might add that a little splash of cab never hurts while one is cooking the meal.;) As for other comforts~ plush towels, silk pajamas and Nuxe dry oil (recently snagged in Paris) are my comfort favorites.

I swear I think chicken soup prevents you from getting a cold and the flu. There is something to that I tell ya! I am more of a cotton PJ sort of girl..very soft. And my favorite bubble bath is Lollia's calm hyacinth and honey. :D I also like Mistral's Milk foaming bubble bath.

Since I stopped eating meat several years ago, my homemade comfort soup has become roasted tomato. It's loaded with vitamin C, feels comforting and terrific with homemade bread!! Yum, now that I've thought about it, I think I'll head out for the ingrediants. As for other comforts, I'm a fan of satin PJ's with a soft flannel lining, hand knit socks and roaring fires. I adore that Laura Mercier Almond creme. It's so luxurious!

Leslie, Chicken soup is my favorite medicine. I've even had it requested when someone in my family is feeling ill. So pleased to see a red wine suggested in place of the traditional "white with poultry". Red is most often, especially in winter my choice. After a leisurely aromatic soak, I adore big fluffy white towels, a think body lotion, cotton flannel pjs and a chenille robe. Oh I don't know if I can wait till tonight! Enjoy your Sunday. Bonnie

Sounds like a great way to pamper yourself and give you a pick me up if feeling under the weather! I always take showers and honestly don't remember the last time I took a long, relaxing bath. I do love to hang out in pajamas, though :)

ReplyDeleteI've been working on my immune system all winter (aka flu season) long. Lots of fresh vegetables and fruit and fresh air and sunshine (weather permitting). Chicken soup is a staple in our house, I like mine with a tablespoon of dijon mustard and a lot of tarragon to give it a french-ish flavour.
ReplyDeleteAlways don a thick terry cloth robe (no fabric softener when washing so as to make it super-thirsty) when out of the shower/bath - I never towel off, just allow as much of the moisture to be absorbed into my skin as possible, and when indulging into something cashmere to curl up with tea and the papers on a snowy day.

Laura Mercier almond coconut milk honey bath is my luxury bath choice!!! and I definitely enjoy slipping into a cotton bath robe after a luxurious soak. Cashmere is great if lounging in the afternoon - but I find it really warm after being in the bath.
