Cold weather calls for extra vitamin C and meals that help our bodies fight the common cold and flu.
Whenever I'm feeling a little tired or run-down I put on a pot of Chicken Soup. Trying to fight colds naturally is always best and this old remedy is my favorite. Over the years I've come up with my own recipe and I wanted to share it with you.
Start with a basic vegetable stock. Wash and dry your chicken pieces and then salt well.
Place onions in your soup pot with some salt and cook until translucent.
4-5 pound chicken cut up into 8 pieces (have your butcher do this)
2 or more TB salt
pepper to taste
2 celery stalks
1 small onion
1 bay leaf
1/4 cup white wine
1-2 TB butter
About 28 to 32 ounces of chicken broth
parsley for garnish
bread for dipping or pasta of your choice
Rinse and dry chicken. Melt butter in your soup pot and add chopped onion. I sprinkle salt over the onions as they are cooking. When the onion starts to brown, add your white wine.
Add chopped celery and carrots and cook for about ten minutes.
Remove vegetables and add chicken. Cover chicken with the broth and a little water if necessary. Cook the chicken for about an hour or until done. Remove from heat and allow to cool. Refrigerate overnight. The next day, skim fat off the top of your soup. Take the chicken pieces out of the pot and take the meat off the bones. Add the meat, veges, and bay leaf to the pot and simmer for another hour or so. When your soup is done, garnish with parsley and serve with pasta or warm bread.
A glass of Cabernet Sauvingon is delicious with this.
