Instead of posting photos of our day, I thought I'd try a "home video" (my husband was such a sport helping me with this!) .. no glam squad or editing.. so it's kinda silly, but I thought it would be fun to do something different. My favorite friends in Blog Land are the ones that share personal things. They are also the ones that always have something kind and thoughtful to say to others. Putting yourself out there is a wonderful way to show people who you really are.
The Blueberry
Considered a super-food, blueberries are high in antioxidants that help our cells fight free-radical damage that can harm us. If placed in a zip lock bag and refrigerated, berries will last about a week. I like to add blueberries to a mixed green salad, mix with my favorite yogurt or use as a topping for ice cream.On a weekday I add some frozen blueberries to my breakfast shake. Blueberries are delicious in pancake batter or sometimes prepared as a simple compote in place of maple syrup.
When I'm not working I look forward to trading my skirts and heels for a pair of cut off jeans and boots or sandals. A walk in our local wooded area is always a treat and I feel blessed to have this so easily accessible.
I would like my own chickens but my husband says they are very stinky and messy. Watching them running free and feeding is so much fun. Bantam hens are my favorite because of their unique head-tops. I tried to get pictures but they weren't cooperating! The smell of farms, horses, hay, chickens .. there's something peaceful about all this. The wide open space, sitting on a horse.. running free.
In the spirit of summer .. how does a Root Beer float sound? We had lunch at a local burger spot and the guys walked up with these!
You have to splurge every now and then, right? And a hot summer day is the perfect time for a frothy shake!
My favorite blueberry pancake recipe
Adapted from Bon Appetite
1 1/4 cup flour
1/8 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup sour cream
1 egg
2 teaspoons of vanilla extract
1/8 cup sugar
1 teaspoon baking powder

Mix the dry ingredients in a large bowl. Whisk the remaining wet ingredients. Add to the dry ingredients, paying attention not to over mix. The batter will be a little lumpy and thick. If you need to add another splash of buttermilk for a thinner pancake, do it.
Heat your grill to medium. Pour your batter on a lower heat than normal because these pancakes are thick and will cook slower.
To make a compote, I place blueberries in a pan with a little sugar and water and cook it down to a syrup-like texture and then pour it over pancakes hot off the grill. These are addicting!

I love the video! Looks like heaven. Grass, blueberries, dogs, husband, sunshine, boots. :) I agree - the smell of horses, farms, etc... are so comforting. Although I agree with your hubby, chickens are stinky ;) But fresh eggs are the most delicious!

This summer I have been eating lots of blueberries: though I don't pick them myself, unlikely other years they are available at a fair price in local groceries. I like them without dressing and cooking, and so does my daughter, who is as well an expert picker of wild little strawberries. I have never cooked pancakes but I'll definitely try your recipe: I just have to find out what buttermilk is and where I can find sour cream :-) I wish you a wonderful week ahead!

It' s a pleasure to see You on video film :) I love blueberries too. Yesterday we wanted to do pancakes with my husband, but we haven't recipe! And there is :) Hens with white head top are so funny! I' ve never seen this species! But my grandmother had hens, and it's a fact, they don't smell nice :) But it' s more and more popular in our contry to have own hens and ecological eggs!

ReplyDeleteWe had chickens (commonly referred to as chooks in Australia) when we lived on acreage and yes the coup does get smelly so you must clean out regularly. Free range eggs are fabulous.

Ok between you and Heather at Arles I'm going to have to try my hand at making a short movie with my camera. Fun seeing your pups running about while you pick berries. We just picked a huge bucket full of blueberries from our shrubs and have been enjoying them on everything. I want chickens too but unfortunately we live in a place where everything running about wants to eat them so no chickens but that's ok we still get fresh eggs right up the road.

ReplyDeleteThe berries look great! Ours are all done for the year here in Indiana. With the chickens, they can be great. It all depends on the quantity of chickens and how large of an area you have for them. Ten dogs could be messy on a one acre property, but one dog on a 10 acre property goes undetected. Hello there! Ah, that is a REAL video! I have done a few on my blog and friends have often asked "why don't you say anything?" so there is at least one with my pupper where I am mainly laughing! Speaking of our four-legged friends, I got a phone call in the middle of the video so missed the end--saw Debra's comment and will have to give it another go. ReplyDeleteI have 4 chickens, used to have 8. In fact one of mine was an all white Polish (the one on the right). She passed away from a heat stroke a few years ago. Chickens are cute and it's great to have the eggs, but they are sometimes stinky on a warm, moist day. And they are destructive to your yard - always kicking and pecking everything. But they are also a lot of fun. Once these chickens, and a rooster, are gone, we will not be getting any more.
Now I am craving blueberries and root beer floats!

i grow blueberries - YUMMO - but not enough that i don't have to buy them (unlike my cucumbers and tomatoes and eggplant - i'm in OVERLOAD with them) -- i think anything with blueberries makes it a delight to eat!

lots of wonderful notions here. I grew up on a ranch and actually loved having chickens, sheep, geese, horses, etc. It was fun but, yes, smelly, sad {they die} and laborious.. What a beautiful outdoor area you have, what a treat. I love the fresh blueberries of summer. Root beer floats, delightful. Have you ever tried rainbow sherbet in 7-up?
