Tonight is an unusual night because the house is a quiet and my husband is out with business folks for dinner. I would not care to have it this quiet every night, but sometimes it feels wonderful and almost therapeutic. I stopped at my local fish market on the way back from the office and picked up a little piece of king salmon.
I'm making a {mini} Mediterranean Salmon Bake So easy and so good! All you need is..
I'm making just a small piece (it's just me).
Chop up some gourmet olives, add some mayo, white pepper, plash of Worcestershire sauce, capers, and a squeeze of lemon. This doesn't need to be exact, just eye it.
Bake it at 375 degrees for 20-25 minutes. I usually take my salmon out a few minutes early and let it finish cooking in parchment paper.
Mmmm! Just dig in.. Delicious served with a salad, fresh bread, and beverage of your choice. So many great recipes here in my Junior League of Seattle cookbook!
.. and I should also mention that as soon as I get everything cleaned up, dinner on my plate.. the family shows. Well, I almost had a second to myself!
So happy everyone is back and wouldn't trade my happy chaos for anything!

I am so laughing...I have that cookbook! My best friend lives in Seattle and she sent me a copy. I'll have to try your salmon this weekend. I relax by going to sleep I only have two buttons, stop and go, sleep and busy!

Those junior league cookbooks are the best! My hubby runs a gourmet cookshop here on the Cape, and jr. league cookbooks are among our bestsellers in that dept. Your recipe sounds and looks delicious! Glad you had a few moments to yourself, but I totally agree with you in that I thrive on the hubbub of everyone in the family being at home. ;)

A little quiet time is good for the soul and a lot of quiet time makes me crazy! :-) My husband travels from time to time and usually the first night is good. I make something he doesn't like to eat and take a long bath and watch Bravo. :-) But the second night I'm anxious for him to come home and fill the house with happy noise. I mean, our three dogs add a lot of excitement but it's just not the same with him. :-)

The salmon looks delicious. I have to make it this way. I love olives so I think I would love your recipe. Don't you love those brief moments of quiet. Sometimes, (my husband jokes) I just sit and stare into space. Mostly because I never know what to do because I so rarely have time to be alone. And yes...we always welcome back the loving chaos!
